Our journey started where most great Australian stories do, with camaraderie. An Australian and US pilot shared two great loves in WWII – their love of bombers and whiskey. The war ended and they were separated by oceans and time but their recipe lived on. Fifty years after the recipe reached Australian shores, veteran Vic continued to distill his whiskey and moonshine in his back shed in Scarborough. By a stroke of luck, Vic’s neighbour was a young man by the name of Al, who helped him write his memoirs, but more importantly, shared his love of whiskey.

The shed became their escape and Vic passed on his recipe to his new comrade, Al and his mate Jimmy made their way to Colorado, tracking down a relative of Vic’s fellow WWII pilot. He found Coop – who shared his love of whiskey and had refined the same recipe from WWII over time. Coop’s life was whiskey and he had recently sold his acclaimed distillery to settle down and retire – until he heard about a story shared in a small shed across the world in Scarborough. Al and Jimmy then travelled across the world to Scotland, where Frank, a man who had been distilling for more than 50 years, helped them refine their recipe.

Revered for his legendary status at Springbank, Bushmills and Bruichlanddich Distilleries, Frank was the rock star our recipe needed. So, with the determination of two young Aussie men, and a recipe refined from one side of the world to the other, Whipper Snapper was born. How did we get our name? “What makes you young little guys think you can take on the big names of whiskey?”

Our answer – We may be young Whipper Snappers, but this is our obsession and we were meant to share this recipe. Our whiskey brings together hundreds of years of distilling experience, to bring a taste that has stood the test of time, with great Australian ingredients. Every bottle we distill is a tribute to Vic, his bomber and all the servicemen who loved the recipe – and now to all of those who will love our whiskey for years to come. 

  • UPSHOT WHISKEY

    Australian Whiskey

    With a look of Golden Amber and a nose of Cedar, toffee, butterscotch and vanilla tones.

    Rich cream texture with light butterscotch, caramel, nutmeg taste that finishes well balanced and clean with hints of maple, vanilla, citrus.

    100% West Australian Grains, 80% corn, 10% malt, 10% wheat and aged in fresh American oak for 2 years in a warm Perth climate.

  • CRAZY UNCLE BARREL AGED MOONSHINE

    43.0% ABV · 700ml Bottle
    Barrel Aged Moonshine

    Look of light Golden Straw and a nose of Slight oak and light vanilla tones.

    The taste is of Spicy vanilla oak with corn sweetness and finishes smooth with a burst of oak and aniseed.

    100% West Australian Grains, 80% corn, 10% malt, 10% wheat and aged in fresh American oak for 6 weeks in a warm Perth climate.

  • CRAZY UNCLE MOONSHINE

    Moonshine

    With a Crystal Clear look and a nose that is light and crisp with hints of sweet corn.

    The Silky texture with light aniseed taste finishes with a light heat and sweetness.

    100% West Australian Grains, 80% corn, 10% malt, 10% wheat and is first unique moonshine produced in Australia.

  • CASK STRENGTH UPSHOT WHISKEY

    64.0% ABV · 700ml Bottle
    Australian Whiskey

    Cask Strength is complex yet powerful in the way it reacts with the oak. Unlike our signature Upshot which enters the barrel at 43%, Cask Strength gets filled at a traditional strength – 63.5%. the result is a warm, long finish with greater depth, and complex mouthfeel – best on the rocks.

    Look: Burnt golden amber.
    Nose: Toasted pecan, toffee, and vanilla.
    Taste: Warm caramel, butterscotch, macadamia, rich oily mouth feel.
    Finish: Long, generous with plenty of depth and vanilla.

  • JETPACK HARD COFFEE

    41.0% ABV · 700ml Bottle
    Hard Coffee

    Jetpack is intentionally unsweetened. Patiently barrel aged. This not a coffee liqueur. This is a hard coffee, made with love. Drink it neat or mix it! A collaboration with Laika Coffee Roasters from Lathlain, Western Australia.

    Crafted using Upshot ‘new make’ whiskey blended with Sidamo , Ethiopian Heirloom variety cold brew. Aged for 3 months together in ex upshot barrels.

    Look; Dark Chocolate. Nose; Sweet, melted toffee. Taste; Chocolate, vanilla, malt, caramel. Finish; Creamy, rich coffee.

  • QUINOA WHISKEY

    Quinoa Whiskey

    Four years of hard work including countless trials have culminated in a 100% locally made innovative whiskey, designed to intrigue and excite the palate. This is Australia’s first Quinoa whiskey and second ever worldwide.

    Boasting a unique and expensive majority quinoa (65%), along with 25% corn and 10% malted barley. The golden variety quinoa is grown locally, near Narrogin in the Wheatbelt region of Western Australia. In fact the quinoa is Australia’s first commercially grown, by our friends, 3 Farmers Quinoa.

    We mature the whiskey in barrels previously used for our award-winning Upshot Australian whiskey then patiently aged it for 3 years right here in Perth’s perfect whiskey climate. Project Q will be sure to test the palate, grain forward and sharply integrated, this whiskey will change your perception of what an Australian whiskey can be!
