Our journey started where most great Australian stories do, with camaraderie. An Australian and US pilot shared two great loves in WWII – their love of bombers and whiskey. The war ended and they were separated by oceans and time but their recipe lived on. Fifty years after the recipe reached Australian shores, veteran Vic continued to distill his whiskey and moonshine in his back shed in Scarborough. By a stroke of luck, Vic’s neighbour was a young man by the name of Al, who helped him write his memoirs, but more importantly, shared his love of whiskey.

The shed became their escape and Vic passed on his recipe to his new comrade, Al and his mate Jimmy made their way to Colorado, tracking down a relative of Vic’s fellow WWII pilot. He found Coop – who shared his love of whiskey and had refined the same recipe from WWII over time. Coop’s life was whiskey and he had recently sold his acclaimed distillery to settle down and retire – until he heard about a story shared in a small shed across the world in Scarborough. Al and Jimmy then travelled across the world to Scotland, where Frank, a man who had been distilling for more than 50 years, helped them refine their recipe.

Revered for his legendary status at Springbank, Bushmills and Bruichlanddich Distilleries, Frank was the rock star our recipe needed. So, with the determination of two young Aussie men, and a recipe refined from one side of the world to the other, Whipper Snapper was born. How did we get our name? “What makes you young little guys think you can take on the big names of whiskey?”

Our answer – We may be young Whipper Snappers, but this is our obsession and we were meant to share this recipe. Our whiskey brings together hundreds of years of distilling experience, to bring a taste that has stood the test of time, with great Australian ingredients. Every bottle we distill is a tribute to Vic, his bomber and all the servicemen who loved the recipe – and now to all of those who will love our whiskey for years to come.

    Look of light Golden Straw and a nose of Slight oak and light vanilla tones.

    The taste is of Spicy vanilla oak with corn sweetness and finishes smooth with a burst of oak and aniseed.

    100% West Australian Grains, 80% corn, 10% malt, 10% wheat and aged in fresh American oak for 6 weeks in a warm Perth climate.

    Upshot – the eventual outcome of a series of events. Upshot is our first whiskey and a tribute to all the hard work, passion and dedication. Proudly crafted from 100% West Australian Grains: 80% corn, 10% malted barley and 10% wheat. Upshot is our modern Aussie expression of a well-rounded whiskey, great for the novice whiskey drinker to the discerning. Uniquely smooth and inviting, and carefully aged in virgin southern white oak in Perth’s Mediterranean climate. Perfect for enjoying across seasons and in good company.     Australian Whiskey

    Your typical bandit has a sense of uncertainty and spends time lurking in the darkness but we are here to bring this one into the limelight. Upshot Bandit is straight forward, approachable and is a whiskey with all of your favourite elements rolled into one. A premium product that is here to stand the test of time with its smooth, inviting and well-rounded characteristics. As with all of our products, we have spent time sourcing the best quality grains. Designed for the contemporary Aussie whiskey drinker, Upshot Bandit has been crafted with corn, wheat and barley and has been maturing in single barrel char #3, virgin American oak. With initial flavours of vanilla, caramel and dark fruits, this whiskey finishes with a smooth taste of butterscotch and chocolate for that sweet sensation. Unlike many bandits, you won’t want to keep this one hidden. Our Upshot Bandit is a new corn whiskey that, as always, is best enjoyed across all seasons and in good company.

  • CASK STRENGTH UPSHOT WHISKEY

    Australian Whiskey

    Cask Strength is complex yet powerful in the way it reacts with the oak. Unlike our signature Upshot which enters the barrel at 43%, Cask Strength gets filled at a traditional strength – 63.5%. the result is a warm, long finish with greater depth, and complex mouthfeel – best on the rocks.

    Look: Burnt golden amber.
    Nose: Toasted pecan, toffee, and vanilla.
    Taste: Warm caramel, butterscotch, macadamia, rich oily mouth feel.
    Finish: Long, generous with plenty of depth and vanilla.

  • JETPACK HARD COFFEE

    Hard Coffee

    Jetpack is intentionally unsweetened. Patiently barrel aged. This not a coffee liqueur. This is a hard coffee, made with love. Drink it neat or mix it! A collaboration with Laika Coffee Roasters from Lathlain, Western Australia.

    Crafted using Upshot ‘new make’ whiskey blended with Sidamo , Ethiopian Heirloom variety cold brew. Aged for 3 months together in ex upshot barrels.

  • QUINOA WHISKEY

    Quinoa Whiskey

    Four years of hard work including countless trials have culminated in a 100% locally made innovative whiskey, designed to intrigue and excite the palate. This is Australia’s first Quinoa whiskey and second ever worldwide.

    Boasting a unique and expensive majority quinoa (65%), along with 25% corn and 10% malted barley. The golden variety quinoa is grown locally, near Narrogin in the Wheatbelt region of Western Australia. In fact the quinoa is Australia’s first commercially grown, by our friends, 3 Farmers Quinoa.

    We mature the whiskey in barrels previously used for our award-winning Upshot Australian whiskey then patiently aged it for 3 years right here in Perth’s perfect whiskey climate. Project Q will be sure to test the palate, grain forward and sharply integrated, this whiskey will change your perception of what an Australian whiskey can be!

  • RYE WHISKEY

    Rye Whiskey

    Hailing from Bruce Rock (Ballardong boodja region) Western Australia, the Fuchsbichlers, originally from Emmering, Bavaria grow a unique, heirloom German Rye. Now famous in the shire for this, Kevin & Jane, now with their son Josh, the fourth generation continue to grow the heritage rye first planted by Michael Fuchsbichler back in 1911. In the past 40 years, dozens of other varieties were trialed, but the flour mills would always prefer the old faithful heritage rye, for its colour and quality in bread making. It does not yield well like wheat and is grown in less favourable soils. There’s a niche market for rye in WA, with only a hand full of growers. Our rye whiskey boosts a high ratio at 85% and we believe it is a true reflection of the Western Australian environment and the heritage of the 100 + year-old grain. A brand-new rye whiskey experience balanced and exploding with flavours like spicy vanilla, orange peel, cherry cola, clove, and salted toffee. Together with 4 + years of virgin charred, American oak barrel maturation in Perth’s Mediterranean climate, it’s a rye whiskey redefined. Perfect for enjoying across seasons and in good company.

  • SINGLE MALT WHISKEY

    Single Malt Whiskey

    After many years of planning, trials and tribulations, we have created a recipe that will stand the test of time and uphold the true Whipper Snapper standards. Our trademark DNA is carried through from our award-winning Ex-Upshot whiskey barrels, bringing you our first signature Whipper Snapper – Single Malt Whiskey. We are proud to produce local, quality products and, with exceptional grains farmed across the Nyoongar boodja (Wheatbelt) region, it was an easy decision for us to continually support the farming families in our own backyard. A uniquely audacious approach to an Australian single malt, we have used a premium barley variety, known as Spartacus. Grown within this region, and malted locally here in Perth, this variety of grain is a proven gladiator within the agricultural community. From farm to ferment; we use open-top fermentation that allows for a warmer fermentation, meaning more fruit-forward characters and depth in esters are derived from the grain. We use a unique distilling style that works in line with our recipe, building trademark quality and flavour. Our hybrid column still is configured to run four plates, cutting hearts at 30% ABV. This gives us only the best hearts spirit, bringing out a savoury, fruity, oily single malt distillate at an overall average ABV of 63%. Patiently aged for four years in our Perth Mediterranean climate, this is a new era of single malt capturing the essence of WA. As with all our products, it is perfect for enjoying across all seasons and in good company.

A Hard Red Winter Wheat from the Armstrong and Blight farms near Narrogin, Western Australia. High in protein, this wheat derives silky soft, honey rich characteristics. Patiently aged for 4 years in Char #3 Virgin American White Oak barrels, flavours of vanilla, raisins, maple syrup and caramel blend artfully together across oak and grain. A taste that is a true reflection of our Western Australia grains and our urban Perth Distillery. A Wheat Whiskey redefined. Mashed, distilled & hand bottled at Perth’s first urban distillery.
