Hellfire Bluff Distillery

Marion Bay, TAS

Our distillery overlooks Hellfire Bluff, a rocky outcrop above Marion Bay in Tasmania, one of the world’s last remaining wild and remote regions. The Bluff gets its name from the unusual colour of its sandstone cliffs. Marion Bay alternates between glass-like stillness and angry white-caps depending on the moods of the fickle island weather.

Its namesake Marion du Fresne, a Breton navigator, landed in March 1772 and declared the land “good and abundant” due to the large number of crayfish, lobsters and oysters. Tasmania’s fertile land and clean air made it an obvious place to start a farm and raise a family.

The farm provides potatoes for our vodka – one of the last vodka's worldwide still using this old method. And we source quality ingredients locally wherever we can for our other spirits. While the farm is our bread and butter, the distillery is our labour of love and we give it the careful dedication you need to make really good stuff.

  • SUMMER GIN

    40.0% ABV · 700ml Bottle
    Floral style Gin

We’ve taken the classic London Dry Gin and given it a local twist. This gin combines the traditional botanicals of London Dry Gin with the addition of brown boronia flower, Tasmanian leatherwood honey and Tasmanian mountain pepper berries.

The result is a spicy, complex gin that’s best sipped slowly, allowing the flavours to evolve on your palate.

  • SLOE GIN

    28.0% ABV · 700ml Bottle
    Sloe Gin

Sloe berries are the fruit from the blackthorn tree that was introduced to Tasmania by early settlers.

Each season, we patiently wait for them to be ready for foraging from the rural hedgerows and thickets that still remain in certain parts of our beautiful rugged State. After the berries are handpicked, they are macerated in our quality gin to draw out the intense colour and bright, ripe flavours.

After continuous testing to ensure the flavour profile has developed to our exacting standards, the process results in a delicious spirit with hints of sweetened citrus and spice.

Serving Suggestions: - Use a great quality tonic and garnish with a slice of lemon - Serve neat over ice as an apertif - Top 30ml of Sloe Gin with sparkling wine for a refreshing Sloe Spritzer

  • COFFEE LIQUEUR

    28.0% ABV · 700ml Bottle

    Coffee Liqueur

To make a great coffee liqueur, you’re got to start with a great coffee. We used Son of a Gun, a full-bodied mix of Colombian, Guatemalan and Ethiopian beans from Zimmah, a Tasmanian speciality coffee roaster.

They roast this blend more than most other coffees, which means rich and bold caramel and milk chocolate notes. Try it over ice to appreciate the complex flavours, or mix it up in the ultimate espresso martini.

  • SALTED CARAMEL COFFEE LIQUEUR

    26.0% ABV · 700ml Bottle

    Salted Caramel Coffee Liqueur

With Tasman Sea Salt. An Exciting twist on our sought after Coffee Liqueur using rich dark caramel and sea salt sourced from the pristine waters of the Tasmanian East Coast. The caramel and salt flavours pair beautifully with the chocolate notes of the coffee beans and perfectly compliment the full bodied flavour. Enjoy over ice or in a Salted Caramel Espresso Martini.
